Restaurateur Bianca Marchi: On a Life Well-Savoured


At nineteen, Bianca Marchi left her native Milan for what she thought would be a fleeting adventure to refine her English. Instead, it became the prologue to a life rich in connection and creativity. A chance encounter with Tyron Simon, now her husband and business partner, anchored her in Brisbane, where the duo has quietly but decisively reshaped the city’s dining scene. 1. What is your current state of mind?

I am focused on being present and truly appreciating the moment I am in.

2. How do you switch off?

Cooking helps me unwind, or I’ll leave my phone behind and head out for a long run or walk.

3. What is the trait you most admire in others?

I admire people who are very connected with their inner selves and embrace a sense of spirituality.

4. Which living person do you most admire?

I’m lucky to be surrounded by so many inspiring and motivated people— like my husband and my mum and dad. I have so much admiration for my friends and am in awe especially of the ones who have children and run their own businesses.

5. What is your greatest extravagance?

My three-hour morning routine haha! I wake up at 5 a.m., enjoy warm water in bed with my husband followed by a Pilates or exercise class. I’ll grab a coffee at our bakery or a nearby café before heading home to cook a nourishing breakfast. I’m usually in the office by 9 a.m.

6. What is the first thing that you do when you wake in the morning?

Hug my husband and have warm water together.

7. What do you consider the most overrated virtue?

Patience. It’s okay to lose it sometimes!

8. Do you have any daily rituals?

I have many, but my morning routine is by far my favourite. It’s non-negotiable, even when I’m traveling.

9. What do you most like about your appearance?

My hair.

10. What does wellbeing mean to you?

To me it means listening to your mind and body and doing what feels good to you.

11. What is the quality you most like in a person?

I love people who are happy to be themselves!

12. Which words or phrases do you most overuse?

I always say, “Do you know what I mean?” I’m not sure why, but I say it all the time.

13. What or who is the greatest love of your life?

My husband, Tyron. We have been married for a year and together for 10! I was 21 when we got together.

14. When and where are you happiest?

I am the happiest spending time with people I love, sharing good food and wine.

15. Which talent would you most like to have?

I would love to be a good singer, but unfortunately, I’m terrible!

16. If you could change one thing about yourself, what would it be?

It is ok not to be in control of everything.

17. What do you consider your greatest achievement?

Anyday Hospitality. I am so proud of how far we have come, the journey it has been seeing our venues come to life and getting to work with so many amazing people.

18. If you were to die and come back as a person or a thing, what would it be?

I love my life – I can’t imagine it differently!

19. Where would you most like to live?

The dream would be to split my time—six months in Australia and six months in Europe.

20. What is your most treasured possession?

My mum gifted me one of her special Pomellato rings. I have always loved it and she gifted it to me the day before my wedding. It is so special to me.

21. What do you regard as the lowest depth of misery?

Feeling stuck indoors and unable to go out and breathe fresh air.

22. What is your favourite occupation?

Drinking my first coffee of the day – pure magic!

23. What is your most marked characteristic?

I am dangerously Italian – haha!

24. What do you most value in your friends?

Loyalty and trust—friends who you know will always have your back.

25. Who are your favourite writers?

I’m loving Elena Ferrante at the moment, but I enjoy mixing up genres and exploring different authors. Reading in bed every night is my ritual, I love it.

26. Who are your heroes in real life?

My mum, dad, my husband and my sister, Alice. Family is everything to me.

27. What are your favourite names?

I love the name Madina.

28. What brings pleasure to your day?

Food! From breakfast to dinner, I love sitting down and savouring every meal, big or small.

29. Do you have any products or objects that you can’t live without?

My kindle. I take it everywhere. Oh and coffee! Always coffee.

30. Where is your favourite place to wake up in the world?

Anywhere! I wake up excited for the day ahead no matter where I am. I am very much a morning person.

31. What is your motto?

Don’t wait for opportunity—create it.
